Ube Kinampay Powder

You’ll need:
1 tbsp Masarap Ube Kinampay Powder
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
¼ tsp salt
1 cup milk (dairy or plant-based)
1 egg
2 tbsp melted butter or oil
Butter, coconut syrup, or ube ice cream for serving
How to make it:
In a large bowl, mix flour, ube powder, sugar, baking powder, and salt.
In a small saucepan over low heat, whisk together egg yolk and sugar. In another bowl, whisk together milk, egg, and melted butter or oil.
Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
For pancakes: Heat a non-stick skillet over medium heat. Pour ¼ cup batter per pancake. Cook 2–3 minutes per side until golden.
