Freshly Grated Ube

You’ll need:

  • 1/2 cup Frozen Freshly Grated Ube Masarap (thawed and drained)
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp Ube Kinampay Powder (for intense colour)
  • 1 tsp baking powder 
  • 1/4 tsp salt
  • 1 cup milk (dairy or plant-based)
  • 1 egg
  • 2 tbsp melted butter or oil

How to make it:

  1. Combine Dry: 
    • In a large bowl, whisk together the flour, sugar, ube powder, baking powder, and salt.
  2. Combine Wet:
    • In a separate bowl, whisk together the milk, egg, melted butter/oil, and thawed grated ube.
  3. Mix:
    • Pour the wet ingredients into the dry ingredients and stir until just combined.
    • Do not overmix.
  4. Cook:
    • Cook according to your waffle maker instructions (or pour 1/4 cup batter onto a medium-hot skillet for pancakes).
  5. Serve:
    • Serve hot with butter, condensed milk, or vanilla ice cream.

Masarap Tip: The grated ube adds a subtle texture and extra earthiness compared to ube powder.
